I ran archinstall and used the linux-lts kernel, so I can't confirm if this will work for the linux kernel, but I don't see any reason why it shouldn't. This is because there is an issue where archinstall is attempting to write to /dev/sda1, despite it not being present on the USB and exiting. The current version of the Arch iso will fully load onto RAM (which I assume you'll have enough of), so you can remove the USB after the shell is loaded. I followed the standard process for flashing a copy of the Arch iso to a USB and booting up the live environment. I spent a bunch of time yesterday trying to get the dGPU recognised on an Arch install yesterday, so I figured I would make this note for anyone looking to install Arch on their NUC11PHKi7C in the future.
